Minty-Fresh Watermelon Lemonade Pop

This recipe was published in PEOPLE magazine on August 1, 2011.  All credit goes to Katie Lee, celebrity chef.  This ice pop is just too good to pass up for a birthday party.  Thank you, Katie Lee.  This is a great idea for kids birthday parties as they can run around the yard with them and have a great time at outdoor parties, especially beach parties.

2 1/2 cups cubed seedless watermelon
1/2 cup lemonade
1/4 cup simple syrup

Combine in a blender and blend until smooth.

Stir in 2 Tablespoon finely chopped fresh mint leaves.

Pour into 6 ice pop molds and freeze at least 4 hours or until completely solid.
