REFRESHING MINT ICE
2 Quarts of water
2 cups of sugar
Juice of 6 lemons
1 bunch of fresh mint or 1 dozen sprigs of mint
Few drops of green coloring
Add enough water to the sugar to boil and make a syrup. Add remaining amount of water and let cool. Add the juice of the lemons and enough coloring to make a pretty delicate green.
Strip the leaves from the mint and put into a strong cloth; pound until beaten to a pulp. Dip the cloth, holding the mint, into the lemon water, shake well until as strong of mint as desired. Pour into container and freeze.
Scrape frozen ice into glasses with tiny tender sprigs of mint on top. This is nice to serve with a salad course or a large spoonful put into a glass of iced tea which is to accompany a salad course.
